If Bountiful Bread isn't the next big national fast-casual concept, it won't be because Kevin Jankoski didn't parse the details.
In a franchise world where there are lots of concepts but few new ideas, franchise details generally come down to matters such as whether to locate in Class A or Class B shopping centers or sell tacos rather than Cajun.
But Jankoski, a former Morgan, Keegan and Co. money manager, said he's looking for every possible advantage, and he has come up with cost-cutting strategies that are unorthodox, to say the least.
Or as Jankoski puts it, he believes "it's the sensible approach to franchising."
