Zucchini French Onion Soup

32 oz. Pacific French Onion Soup 2 Tbl. Brown Rice 6 Zucchini squash 1 Onion Olive Oil Spray Directions: 1. Put brown rice in a pot with French Ionion Soup, bring to a boil 2. Reduce heat and cover, cook for 20 minutes 3. Trim ends of zucchini and slice into 2 inch rounds 4. Put in a pot with soup and rice, cover and cook on low for 15 minutes or until zucchini is soft, remove from heat. 5. Meanwhile, chop onion in fine dice 6. Spray pan with olive oil spray and slow cook onion until soft 7. Add onion to soup 8. Puree mixture using hand blender, blender or food processor. Equivalency= Free Vegetable
