Chili Place Can Warm You Up

(Saturday, February 01, 2003) - During the recent chilly, rainy weather we've had, I experienced a rather odd occurrence - I was craving chili. And my wife is the one who's pregnant. Canned chili would not do. I wanted something hearty and fresh. Luckily, I remembered hearing about a new place in Fashion Island's food court called Red Rock Chili Co. To be fair, they also serve soups and salads. Red Rock has five types of chili, including vegetarian which is available by the cup, bowl or in a serving called "a lot," which is 32 ounces. I chose the Hot Rock Chili and the soup of the day, which was tomato basil. The Hot Rock Chili is "knock-your-socksoff spicy". With its ground beef; celery; onions; red and green bell peppers' jalapeno, habanero and chipotle chilies, it will rock your taste buds. The soup was perfection - not too thick, not too watery, and it was just the right amount on the basil. First timers should try the Red Rock Sampler, which is any combo of three types of chili, soup or salad. Chili can be served on spaghetti, a baked potato, a hot dog, freedom fries or a burrito. When made really well with just the right blend of spices and seasonings, and enjoyed in the company of family or good friends - it seems to almost feed the spirit. The first thing one notices about Red Rock Chili Co. in Fashion Island's Atrium Court is its bright-red neon sign with a "healing hand". "It represents how we feel about our chili. It is comfort food: the ambrosia of modern man," said Paul Collis, who, with his wife Carol, owns the dining establishment that got its name from the couple's frequent visits to the Sedona Desert of Arizona. Menu highlights include the Red Rock Chili Cincinnati Style - made with cayenne , unlike the traditional Southwest version that contains chili peppers, the signature item grabs you not in the mouth, but in the back of your throat. If you want instant heat, go for the Hot Rock Chili, which is made with habaneros, smoked chipotles and jalapenos. Those that like it mild should try the regular Red Rock Chili, a tasty concoction with beef and beans. I like the White Rock Chili, which features a light-red sauce, chunks of simmered chicken breast, white beans and mild green chiles. Everybody thinks their chili is the best, and if you're one of them, Red Rock Chili can help you prove your point. The Chili of the Day features recipes from customers, and the one I sampled on a recent visit was quite good. The recipe's author won a T-shirt and bragging rights for his tasty steak-and-mushroom chili. You can order any of the chili selections atop spaghetti or in a bread bowl. Other specialties include the Red Rock Spud, a chili-topped baked potato with cheese and onions; or the Red Rock Burrito with the chili of your choice wrapped in flour tortilla. Also featured are fresh soups and salads, including a creamy potato-leek and a pleasantly tangy tomato-basil. Red Rock Chili Company is open from 11AM to 9PM Monday through Saturday and until 8PM on Sunday. Take-out and large order catering is available.
