Wisconsin Horseradish Puts "Sass" In New Sandwich
EAU CLAIRE, WI (Friday, January 14, 2005) -
Two Eau Claire, Wisconsin-based firms have partnered to introduce a sassy zest to a classic sandwich. Erbert and Gerbert's Subs and Clubs has teamed with Silver Spring Gardens, Inc., that produces a sauce using fresh horseradish grown in Eau Claire. Silver Spring Sassy Horseradish Sauce will be featured on Erbert & Gerbert's Sassy Roast Beef and Cheddar beginning February 9, and running through March 25. Individual bottles of the special sauce also will be sold in Erbert & Gerbert's 31 stores.
The partnership is an example of how creative, community-minded small businesses can form effective partnerships with local growers while giving themselves a unique and competitive edge in the heavily, saturated quick service industry. Finding fresh baby greens may be difficult in the cold months of winter, but entrepreneurs can work with what's available-in this case, Wisconsin's famed root crop-to give their menus a distinct and local flavor.
"Part of our mission is to be simultaneously wacky and wholesome," said Bob Helman, director of operations for Erbert & Gerbert's. "This new sandwich allows us to take a sassy approach to a traditional sandwich while keeping our commitment to using fresh, wholesome products,"¨ he added. Along with the Silver Spring Sassy Horseradish Sauce, Erbert and Gerbert's Sassy Roast Beef will feature sharp cheddar cheese to complement the flavor of the horseradish. Lettuce, tomato and onion will round out the sandwich.
Ed Schaefer, president of Silver Spring Gardens, said this is the first time in the company's 75-year-old history that they have teamed with a sandwich company. The fresh horseradish gives the sandwich a gentle bite and a distinctive flavor.
