Brinker International And Rockfish Veteran Tapped As Executive Chef For Boston's The Gourmet Pizza

Seasoned chef to add taste of regional fare to national menu

(Monday, April 18, 2005) - Samuel "Bud" Boswell, a classically trained corporate chef with more than 20 years of industry experience, has been tapped to run the corporate kitchen for Boston's The Gourmet Pizza, announced Jim Treliving, President and CEO of Boston Pizza Restaurants, LP – parent company of the nationally franchised casual dining restaurant chain.

As the executive chef for the U.S. operations of Boston's, Boswell will develop new food and beverage menu items, review existing items and handle all food and beverage purchasing and vendor relationships for Boston's.

"Bud brings a wealth of corporate experience to our concept," said Treliving, who was introduced to the chef by a mutual friend. "As our company continues to expand nationally, it was important that we hire a U.S.-based chef who understands the need to create a strong brand focused on a superior food product."

Each quarter, Boswell will develop specialty menu items that are offered for a limited time in an effort to introduce new menu items to the permanent menu launching in May 2005.

Boswell hit the ground running with his first initiative – which was the development of 20 authentic dishes that are being included on Boston's new menu, including:

The Roman Pizza The Italian Trio (lasagna, chicken marsala, fettuccine alfredo)

Oven Roasted Grouper Boston's Vegetable Lasagna

Chinese Chicken Salad 7-Pepper Steak Sandwich

Prior to joining Boston's, Boswell served as operating partner of Rockfish Seafood Grill since 2002, where he also was assistant to the vice president of operations and corporate chef. In this role, he developed wine lists, was responsible for food specials throughout the restaurant company and created the monthly chalk-board specials for all 26 Rockfish restaurants.

Before joining Rockfish, he was corporate executive chef and director of purchasing for Dallas-based Blue Mesa restaurant group for three years. Boswell also served as Executive Chef at City Café and was with Ben E. Keith food as director of culinary education and training.

A fourth-generation Texas restaurant family whose roots began with Luby's Restaurants, Boswell is a European/classically trained chef, having studied in Dublin. He attended Baltimore's International Culinary College and received an associate arts degree American culinary


"This position with Boston's is the culmination of all my learning and experience," says Boswell. "It allows me to demonstrate my creative side, plus I get to ‘do the deals…' find the food products, source the products and bring them to the restaurant.
