Six New Items Lower Fat/Calories but Keep Protein/Fiber High Customers Can Expect Traditional Baja Fresh Flavor

(Friday, June 20, 2003) - Baja Fresh Mexican Grill today announced the introduction of Lighten Up! the new summer menu that lowers fat and calories while providing high protein and fiber. Using flavor as a business strategy, Baja Fresh has created recipes that deliver the exceptional Baja Fresh taste customers have grown to love in lower fat/lower calorie options. The six new items work with many of the current diet regimens, enabling Baja Fresh to satisfy growing customer demand for more choices.

Available in all Baja Fresh restaurants starting June 24th, the innovative offerings, which include the chicken and vegetarian Bare Burritos ™, Enchiladas Verano, Grilled Veggie Tacos, and Side-by-Side chicken and salad combo, Mahi Mahi and shrimp Ensalada, maintain Baja's traditional freshness and flavor, and satisfying portions. Every item on the Baja Fresh menu is made to order - no microwaves, freezers, lard and MSG are ever used in any of its restaurants - making it the only quick, casual restaurant that offers genuinely fresh food. According to Technomic an independent restaurant research firm in Chicago, Baja Fresh received the highest ratings by consumers in the categories of taste, freshness and quality, and said Baja Fresh has the highest sales per restaurant in the quick, casual industry category. Baja Fresh was the second fastest growing restaurant concept in America in 2002.
